Crock Pot Barbecue Chicken

If I didn’t have a crock pot, I am certain their would be many nights that my family would be eating sandwiches for supper! I bet I use it 2-3 times per week. This recipe for barbecue chicken, like many of my other crock pot recipes, can be made ahead –  simply dump all the ingredients into a Ziploc freezer bag and freeze for later use! I like to get a family sized package of chicken pieces and make several bags to freeze for days when I know I won’t have time to cook, but will still have the advantage of a home cooked meal! Another tip: if you don’t have fresh peppers or onions, throw in some dried instead! I always keep some dried garlic, onion and bell pepper on hand for stews, soups and slow cooking!

Crock Pot Barbecue Chicken

4 boneless, skinless chicken breasts
1/4 cup green pepper, chopped
1/2 cup onion, chopped
bottle of barbecue sauce – your choice

Dump all ingredients into your crock pot and cook on low 6-8 hours. Serve with your favorite sides – slaw, baked beans or potato salad! Or, shred chicken for sandwiches or salads.
