Rainy Sundays and Crab Cakes

I was sitting in my family room yesterday – watching movies and being lazy while it drizzled rain all day long, not to mention it was COLD, y’all! Bundled up in my recliner I thought back to what I was doing last year at this time. We had cruised away for a week to the Virgin Islands to soak up some sun and take a much needed break from a crazy 2011. We had an amazing time – despite my husband being on crutches from achilles surgery just a month before. It was kind of nice not stressing about what excursions we could take, because he couldn’t do any! Instead, the three of us spent our days lazily lounging on white sand beaches or just napping onboard on the “Serenity” Deck. When we weren’t being super lazy, we were trying out cuisine like starved cats! Hubby stuck to his favorites – meat, potatoes, and more meat, while I scarfed up all the seafood I could get. A more memorable meal consisted of crab cakes. And y’all don’t get me wrong, Carnival puts out a pretty decent spread, but I think my crab cake recipe SINKS theirs! (giggle, giggle!)
