Stuffed Chicken Breasts

OK y’all, I know I am supposed to be posting good-for-you recipes, but I had to share this one! So, consider yourself forewarned! Actually, it could be “good-for-your-soul” if you really want to know the truth! It certainly lifted my spirit straight to heaven when I tasted it!

Many BRAVOS go out to Christy over at The Southern Plate for this insane dish! She posted it a week or so ago and called it “Redneck Chicken Cordon Bleu”. She should have called it “Slap Yo Mama AND Yo Daddy Cause It’s That Good Fried Chicken!”

Me and Chef Chris have really been putting forth a great effort to diet and exercise and decided that this fried chicken would be our cheat this week. SO. WORTH. IT.

It starts with boneless, skinless chicken dredged in an egg wash and then crushed Ritz Crackers – how could you go wrong with Ritz-coated ANYTHING I say! It is then fried until brown and crispy…and then…

…butterflied and stuffed with PIMENTO CHEESE.

OH-EMM-GEE! I said Pimento Cheese! The heat from the fried chicken melts the cheese and it turns out being one gooey and delish piece of awesomeness! Forget the French version of Cordon Bleu – Christy has made it a Southern original!
