Let's start by making the broth. We wash the meat well, fill it with cold water (2.5 l) and put it on heating.
When the water boils, remove the foam with a slotted spoon and cook until the meat is cooked (50 minutes).
Meanwhile, peel the potatoes, onions and carrots.
Cut the potatoes into cubes and boil in salted water until tender. Cook potatoes 15 minutes after boiling. We put it in a colander.
Using a crush, soften the potatoes in mashed potatoes, letting them cool.
Finely chop the onion.

In a frying pan in vegetable oil, fry the onions and carrots until golden brown.
