The fancy dumplings and egg soup is a great lunch that can be made quickly enough. Boiled and mashed potatoes, together with chopped boiled eggs, add thickness and satiety to the soup. Thanks to these products, as well as vegetables in the dish, the soup with dumplings turns out to be rich and tasty.

We prepare the necessary products.

Boil the eggs hard-boiled (10 minutes after boiling), then cool in cold water.

Peel and dice the eggs or knead with a fork.

Pour 1.2 liters of water into a saucepan. We peel one potato (since my potatoes are large - I cut it in half) and put it in a saucepan. Bring to a boil and boil the potatoes for 20 minutes.

During this time, peel the onions and carrots. Dice the carrots and onions.

Fry onions and carrots in a frying pan with heated oil for about 5 minutes until golden brown.

Peel and chop the garlic with a knife.

Dip the tomatoes in boiling water for 1 minute, then remove the skin. Cut the peeled tomato into cubes.

Add tomatoes and garlic to the onion and carrot.

Fry for another 2 minutes and remove from heat.

Peel the second potato and cut into medium-sized cubes.

Put the potatoes in boiling water with whole potatoes and cook for 10 minutes.

Then put dumplings, peppercorns and bay leaves into the boiling soup.

As soon as the dumplings come up, take out the whole potatoes.

And knead mashed potatoes.

Add mashed potatoes, frying vegetables, eggs and salt to the soup.

Boil the soup over low heat for another 3-5 minutes. Finally, add the pepper mixture.

Stir the soup with the pepper mixture and remove from heat.

Finely chop the parsley.
Soup with dumplings and egg is ready. Pour the soup into bowls and sprinkle with chopped parsley.
