Delicious and healthy vegetable soup that does not require a lot of cooking time. The green beans remain juicy and crispy in the soup.
Food (for 4 servings)
Green beans - 200 g
Potatoes - 1-2 pcs. (200 g)
Bulb onions - 1 pc. (100 g)
Carrots - 1 pc. (80 g)
Eggs - 3 pcs.
Butter - 1 tbsp. the spoon
Ground coriander - 0.5 tsp
Salt to taste
Ground black pepper - to taste
Fresh basil (for serving, optional) - 2-3 leaves
Water - 2 l
Step by Step Photo Recipe: Vegetable Soup with Green Beans and Boiled Eggs
Boil the eggs hard-boiled (within 8-10 minutes after boiling), cool in cold water.
Peel and cut the cooled eggs into medium cubes.
Peel the potatoes and cut into cubes.
Pour 2 liters of water into a saucepan and bring to a boil. Put chopped potatoes in boiled water. Cook over low heat for about 15 minutes.
Peel the onion and cut it into small cubes. Peel the carrots and cut into small strips or grate them on a coarse grater.
Cut off the tips of the green beans. Cut the beans into small pieces (about 2-3 cm).
Melt the butter in a frying pan and put onions, carrots and green beans in it.
Add coriander and ground black pepper and fry vegetables over low heat for 5-7 minutes. When cooking vegetables, we often stir them so that they become softer, absorb the aroma of spices, but do not fry too much.
Add the fried vegetables to the pot with potatoes.
Salt to taste and cook for 3-4 minutes.
Add chopped boiled eggs and cook for another 2 minutes.
Vegetable soup with green beans and boiled eggs is ready.
When serving, we add our favorite greens to the soup bowls, I put basil - it gives the vegetable soup a special flavor. Enjoy your meal!
