Ogirchanka is an old dish made from sauerkraut. Initially, this soup, as they say, was cooked only from cucumbers, with sour cream or milk and flour. Then corn grits appeared in the ogirchan recipe. This unusual soup will appeal to lovers of pickles.

How to cook ogirchanka: Cut pickled
cucumbers into strips and throw them into the boiled broth. Traditionally, cucumbers are cooked for an ogirchanka for about an hour, but, in my opinion, 30 minutes is enough to cook the whole soup.
Add the coarsely chopped carrots immediately.
Add prepared corn grits and cook the soup, stirring occasionally, with moderate boil until the carrots and grits are soft.
(You can pre-soak the corn grits in cold water for a few hours to make them boil faster.)
Add to the soup from sauerkraut and corn grits the brine left over from the cucumbers to taste, pepper.
Put sour cream, herbs and remove the ogirchanka from the heat.
We serve ogirchanka to the table.
