I love lentils and I know a great many different soups. How do you like that? It is appetizing, hearty and delicious. You can cook both lean lentil soup and meat broth.

How to make lentil soup with noodles and pickles:
Rinse the lentils.
Put the lentils in a saucepan, add water (or broth). Put on fire, bring to a boil. Remove the foam and cook over low heat for 20 minutes.
Meanwhile, peel and wash the onions and carrots. Cut into strips. Carrots can be grated on a coarse grater.
Cut the cucumbers into cubes or grate them on a coarse grater.
Measure out the right amount of noodles (or vermicelli).
Wash and finely chop the herbs.
Preheat a frying pan, pour in vegetable oil. Put prepared onions and carrots in hot oil. Simmer vegetables over medium heat, stirring occasionally, for 2-3 minutes.
Add tomato, stir. Simmer for one minute. Add cucumbers. Simmer, stirring occasionally, over the lowest heat for 5 minutes.
Put the frying in a saucepan, salt, add your favorite spices. Pour noodles (or vermicelli) into the boiling soup. Cook lentil soup over low heat until noodles are tender (about 5 minutes). Add greens. Remove lentil soup from heat. Let the soup steep, covered for 10 minutes.
