Corn soup is often served in Chinese restaurants, but at home, canned corn soup can be made quickly and easily.

Let's prepare all the products for the corn soup. You can take ready-made chicken stock, you can use chicken stock cubes.
How to make Chinese corn soup:
Pour 1.5 liters of chicken broth into a saucepan. (I made a broth from two bouillon cubes, dissolving them in 1.5 liters of boiling water.)
Pour canned corn together with liquid into the broth. Cooking for 5-7 minutes.
During this time, finely chop the ginger, garlic and the white part of the green onion. Fry vegetables in vegetable oil until golden brown.
Put the fried vegetables in the soup, cook the corn soup for another 10 minutes.
Remove the soup from the heat and use a blender to punch it until smooth. There is a variant of the soup where the corn kernels are partially ground. Do as you please.
We put the soup on the fire and continue to cook.
In a bowl, combine two chicken eggs with 1 tbsp. spoon of water.
Pour the egg mass in a trickle into the vegetable puree soup. The eggs will turn into flakes, which is exactly what we want.
Corn starch is used as a soup thickener. In a deep container, mix the soy sauce, starch, 1 tbsp. a spoonful of soup broth.
Pour a mixture of starch and soy sauce into the soup, it will thicken immediately. We taste the corn soup with salt and add salt if necessary. Keep the puree soup on the fire for another 2 minutes and remove the pan from heat.
Chinese corn soup is ready. Pour it into portioned plates and serve, sprinkle with chopped green onions.
