Cooking pickle for lunch together. This is an economical version of your favorite soup. In this recipe, instead of meat, we use kidneys, and to give the meat pickle a unique taste and satiety we add barley and spicy herbs.

How to prepare meat pickle:
Wash the kidneys, soak in water for 6-8 hours, changing the water to fresh water 2-3 times during this time (to remove a specific smell).
Then remove films and fat from the kidneys.

Pour fresh cold water, bring to a boil, simmer over medium heat for 20-30 minutes.

Remove the kidneys, rinse, cut into small slices.

Boil the kettle. Rinse the groats with cold water, pour boiling water in a saucepan and put to steam for 30-45 minutes, changing the boiling water 1-2 times. Then the barley will cook faster.

Peel the cucumbers. Do not throw away the skin!
Cut the peeled cucumbers lengthwise for 4 hours, then cut across into small slices.

Pour cucumber peel with 1-1.5 cups of boiling water and boil over low heat for 10-15 minutes.

Then discard the boiled skin, and lower the cucumber pulp into the brine and simmer for another 20 minutes.

Boil water in another saucepan. Put the prepared kidneys in 1-5 tbsp. boiling water, boil for about 30 minutes.

Meanwhile, peel and wash the carrots, celery and parsley roots. Cut the roots into thin strips.

Add the roots cut into strips (carrots, parsley, celery), prepared cereals to the kidneys to the saucepan.

Peel, wash and slice potatoes.

Peel, wash and chop the onion.

Wash greens and chop finely.

After 10-15 minutes, put potatoes, finely chopped onions into a saucepan.

Cook until the potatoes are tender over medium heat, covered (about 20 minutes).

Then add the prepared cucumbers, add salt, if necessary, add spices and continue cooking for another 10-15 minutes.

Then, after making sure that the kidneys are ready, season with spicy herbs and cook for another 3 minutes. The meat pickle is ready.

Season the meat pickle with sour cream when serving.
