All soups called pickle combine cucumbers, salted or pickled. There are pickles without barley or with barley. This is a recipe for pickle without barley. It also contains cheese, so this dish can also be called cheese soup.
Smoked pork brisket - 150 g
Potatoes - 4 pcs.
Bulb onions - 1 pc.
Pickled cucumbers - 3 pcs.
Grated hard cheese - 1 glass
Chicken broth - 6 cups
Brine - 3/4 cup
Milk - 2/3 cup
Flour - 2 tbsp. l.
Ground paprika - 1 tsp
Ground black pepper
Fresh dill (for serving)
Sour cream (for serving)

How to cook pickle with cheese:
Cut pork belly into thin strips and fry in a heavy-bottomed saucepan in your own fat.
Take out the brisket and fry the onion, cut into large cubes in the released fat.
When the onion is fried, add the diced potatoes to it, mix.
Pour in broth. Cook for 20 minutes.
Mix milk and flour until smooth.
Add to soup. Mix.
Grate cheese on a coarse grater. Add to potato soup, stir.
Cut the cucumbers into slices, add to the cheese soup.
Pour brine into the soup, stir. Cook the pickle with cheese for another 5 minutes. Season the pickle with paprika and black pepper.
When serving pickle add sour cream, chopped fresh dill and pieces of fried brisket to the bowl of soup.
