Sort the pearl barley, rinse well, pour in three incomplete glasses of boiling water, put on low heat and steam. Drain the broth, and rinse the cereals.
Peel the potatoes, wash and cut into cubes. Peel the carrots and parsley root, wash and fry together with finely chopped onion in oil.
Peel the cucumbers, cut lengthwise, remove seeds, cut into strips.
Bring the broth or water to a boil, put the cereal and cook for 20-30 minutes. 15-20 minutes before the end of cooking, add potatoes, a mixture of carrots, parsley and onions, cucumbers.
At the very end of cooking, pour in the cucumber pickle, salt to taste.
Pickle can be prepared in meat broth with various meat products, vegetarian, with fresh or dried mushrooms.
