Lobster and rice puree soup is an exquisite light soup for lovers of tasty and aesthetically pleasing food.

Fresh lobster - 500 g
Long grain rice - 75 g
Carrots (diced) - 1 pc.
Celery stalk (finely chopped) - 1 pc.
Brandy - 45 g (3 tbsp. L.)
Dry white wine - 250 g
Butter - 75 g
Onions (finely chopped) - 1 pc.
Fish broth - 1 l
Tomato paste - 1 tbsp l.
Garni bouquet (a bunch of fresh or dry herbs) - 1 pc.
Fat cream - 150 g
Salt to taste
Ground white pepper - to taste
Cayenne pepper - to taste

How to make lobster rice soup:

1. Break the lobster into pieces. In a large, thick-walled saucepan, heat half of the butter, put onions, carrots and celery in a preheated saucepan, and cook vegetables over low heat until soft. Put the lobster pieces in a saucepan with fried vegetables, cook until the shell turns pink.
