Let's prepare all the ingredients for cooking rice with vegetables and pineapple, Thai style.

How to cook rice with vegetables and pineapple, in Thai:
Rinse the rice under running water, let the water drain.
Heat 1 tbsp in a frying pan. l. vegetable oil. Put rice in a frying pan and fry it for 3-4 minutes, until transparent.

Pour 1 liter of water into a saucepan. Let the water boil. Put rice fried in a pan in boiling water and cook it for 3 minutes less than indicated in the instructions on the package for it.

In another pan, fry the peanuts for 2-3 minutes.

Chop the roasted peanuts finely with a knife. 1 tbsp. l. leave peanuts for decoration.

Add the peanuts to the vegetables with pineapple in the pan and simmer for another 2-3 minutes.

Drain the rice with water and put the rice in a colander.

Add rice to the pan with vegetables.

Finely chop the garlic, cilantro, mint and chili with a knife.

Put the chopped vegetables in a bowl, add honey, soy sauce, the remaining 1 tbsp. l. olive oil, squeeze the lime juice. Mix well the Thai rice sauce.

Put the sauce in the pan, mix all the ingredients, simmer the vegetables for another 4-5 minutes.
Remove the Thai-style rice pan from the heat.

Thai rice with vegetables and pineapple is ready! We shift the rice into pineapple halves, decorate the top of the dish with cilantro leaves, chili rings and peanuts.
