Prepare the food you need. Rinse the spinach in water, cut the stems from the leaves. If using frozen spinach, defrost it first.

Cut the spinach into ribbons and place in the bowl of a food processor. Beat in a couple of eggs, add salt and pour in olive oil. Grind the contents of the bowl for 5-7 minutes, being careful to chop the spinach as fine as possible. (You can use a blender, meat grinder.)

Then add wheat flour to a deep bowl, leaving a couple of handfuls to roll out the dough. Make a small depression in the flour, pour the resulting spinach mass into it and knead the noodle dough.

The dough will be steep and firm. Leave it under the plastic wrap for 20 minutes.

After that, divide the dough into several equal parts and roll it out in a noodle cutter or with your hands, constantly sprinkling with flour. The rolled out layers of dough must definitely dry out before you start cutting them into noodles in the noodle cutter, otherwise they will simply stick to the technique.

After 20-30 minutes, you will be able to cut even noodles in the size of your choice in the noodle cutter. Sprinkle homemade noodles with flour and dry for 24 hours at room temperature, or in an oven at 60 degrees for about 1-2 hours. You can store homemade spinach noodles for 2-3 months in a dry place.

To boil spinach noodles, place them in boiling salted water for 5-7 minutes, and then put them in a colander and rinse. Serve hot, drizzled with olive oil and ground black pepper.
