Marinated zucchini with mushrooms
In a large bowl, combine mushrooms, zucchini and diced red pepper. In a small bowl, combine finely chopped garlic, lemon juice, butter, sugar, salt, tarragon and black pepper. Pour the marinade into the vegetables. Marinate vegetables in the refrigerator for 8 hours, stirring occasionally.
Serve in a deep platter.
