To make a roast beef with potatoes, you will need beef (preferably young), potatoes, onions, vegetable oil, water or broth, spices and bay leaves.

Cut the beef pulp into pieces 1 cm thick and 3-4 cm long.

Chop the onion into half rings.

Cut the potatoes into slices or cubes.

In a frying pan over medium heat, heat 2 tablespoons of oil, pour onions into a preheated pan.

Fry the onions over medium heat, stirring occasionally, until light golden brown, about 3-4 minutes. Transfer to a plate, set aside.

In the same pan in which the onions were fried, put the pieces of beef.

Fry, stirring occasionally, until all the liquid has evaporated from the meat. When there is no water in the pan, add the remaining 2 tablespoons of oil and fry the meat, stirring occasionally, for about 3-4 minutes.

Put half of the fried onions on the fried meat.

Put potatoes on the onion, salt and pepper.

Place the rest of the onion and bay leaf on the potatoes. Pour in water or broth, increase heat, cover the pan with a lid, bring to a boil. Reduce heat to low and simmer until tender, about 40-50 minutes. The stewing time may be longer, depending on the quality of the meat. After 40-50 minutes, check the readiness. If the meat is still firm, and the liquid has boiled away, add more hot water (broth) and simmer until tender.

Serve the cooked roast well with herbs and pickles (optional).
