Place the fried duck in a saucepan, add the sautéed onion, tomato sauce, bay leaf, salt, pepper and simmer under a closed lid for 35-40 minutes (over low heat).

Peel the potatoes, wash and fry on all sides in duck fat and vegetable oil over medium heat (10 minutes).
Turn on the oven.
