Roast hussar (old recipe)

Beat off a piece of beef, grease with juice squeezed from lemon, and put in a cold place for about 1 hour. Sprinkle the meat with flour and fry in oil. Then pour in a little boiling water, cover and simmer for 45 minutes. When it is almost ready, take it out onto a board, let it cool slightly and make deep cuts on it. Put the pre-cooked minced meat in them. Add flour and onion cut into rings to the resulting juice. When the onion is soft, pour in hot water, add the meat, cover and simmer for another 35-40 minutes. Put the meat in a whole piece on a dish. Cut pieces into portions right on the table. Cooking minced meat: finely chop the onion, bring until soft in oil (do not brown). Add grated black bread, salt and pepper to taste, stir and cool slightly. After that, add the yolk and mix everything well.
