Roast "Monk's Meal"
Soak the lamb for 5 hours in a slightly acidic solution of apple cider vinegar. Then dry, wrap in a towel, beat off with a wooden hammer on all sides, sprinkle with garlic cloves, and rub the surface with garlic crushed with salt. Place the meat on a baking sheet with heated oil, sprinkle with carrots, cut into strips, and bake in the oven for 30-35 minutes, occasionally pouring over the juice that stands out. Cut the roast into slices, sprinkle with parsley. Serve with boiled beans and sauerkraut.
