Rinse the rabbit meat under running water, pat dry with paper towels and cut into pieces.
Chop the garlic, rosemary and sage finely.
In a frying pan, heat a few tablespoons of olive oil and melt the butter in it. Place the pieces of rabbit meat there, sprinkle with a mixture of herbs and garlic, salt and pepper to taste. Let it brown (remember to turn the pieces of meat frequently).
When the meat is slightly browned, pour in the wine and let it partially evaporate (simmer over low heat without a lid).
When the wine is half evaporated, pour in the broth, cover the pan and simmer over medium heat for 45 minutes, periodically turning the meat over and adding the broth.
