Cod casserole with vegetables
Peel and coarsely grate carrots, celery and onions. Melt half of the recipe's butter in a small saucepan and add the onion and root vegetables. While stirring, cook the mixture over low heat for 10-15 minutes. Grease a large but shallow baking dish with butter and line the bottom with slices of bread. Put the fish pieces on top, season with salt, pepper and lemon, then put the vegetables on the fish. Sprinkle with chopped parsley and ground breadcrumbs, drizzle with the remaining butter. Place in preheated oven and cook for about 40 minutes.
