How to make pasta with octopus sauce:
Fry chopped garlic and red hot peppers in a little olive oil.
Add fresh tomato, cut into large cubes. (If using cherry tomatoes, cut them in half or quarters.) Lightly brown the tomato.
Add the sliced octopus, pre-cooked until tender. You can cook it in a pressure cooker, 20 minutes is enough for a medium octopus (600 g). When cooking, I always add carrots, celery, onions and bay leaves. And also peppercorns and cloves, and of course salt.
Simmer the pasta sauce for 7-10 minutes, check for salt, add chopped parsley (this time I had to use dry).
In the meantime, we cooked al dente tagliatelle (or other pasta). Drain the water and place the paste in the pan. Mix everything and bring the pasta with octopus sauce until cooked for 1 minute.
